  • Chemicals or not?

    I am new to wine making , however with the help of the site ,and everyone involved I feel I have come a long way in a short period of time.I first started to think I would make the wine as natural as possible. Now I'm beginning to think I should the chemicals for clearing and preserving ect. What are some thoughts on this.I currently have a batch 15 gallons racked twice with no additives in it.What are some thoughts ,and what should I add if I do.

    You should certainly consider adding sulphite to protect your wine from spoilage organisms.

    other than that you can keep it pretty much au naturale if you like

    how much sulphite you need depends on the PH of the wine
    look in the download section for some info on this

          Yes, after talking to many people I think I will have to go hith the sulphites after all.
