  • sultanas/raisins with vegetable oil

    Morning folks The sultanas and raisins i have says there in vegetable oil, are these ok to use or will the oil contaminate the wine.

    The oil will indeed contaminate the wine, so it needs to be washed off thoroughly. Always check when using re-packaged foods for this kind of thing.

    Personally I use grape concentrate instead, its cleaner, and imparts less of a sherry taste then raisins. I still use sultanas sometimes though.

    (unless of course I'm making sherry!)

      Should i just boil the sultanas then rinse with cold water ?

        Dont boil things you are adding to your must....(despite what you may have read in recipes/methods)

        it never helps in any way, simply releases any pectin present, and gives a cooked taste to the finished wine.

        washing the fruit thoroughly should get rid of most of the oil for you. I choose not to do it this way, as it is a bit of a ppain...however, you already have these raisins sultans, so you need to use them as its a crime to eat fermentables

        so give them a thorough wash and use them.

              I soak them in hot water for about five mins you will see the oil float off then rinse in a sieve under the hot tap.Not had any problems so far.

                  if you use hot water in any part of your winemaking processes, be sure to add double the normal dose of pectolase.(see side of pectolase tub...often gets missed)
