Im just moving the fermenting process from Glass Dj's to 25 Litre Buckets. Im basically upping the production rate. Thing is I know that wine no 1 is supposed to be a quick drinker and not left too long, but would there be any flavour improvements by leaving it for say a year? If I do that would I have to add any more chemicals to helps preserve the wine?

Was really a hectic day yesterday. I started my 25l of Wine number 1 yesterday, along with bottling 12 bottles that had cleared. I really dont know how some of you do it. Just doing that took me 3 hours
I think ive got to get a procedure sorted out in my head to allow me to save time. It seems to take me longer to sterilize everything than it does to make the stuff
