Thanks, I'd never heard of Better Bottles. I did a quick google and found some interesting links:

Besides their light weight, are there any advantages to using Better Bottles over glass? Anyone have any problems with the Better Bottles for primary fermentation? They seem like a pretty good choice for homebrewing.

(I think "carboy" is American for demijohn?)

Thinking about the plastic water bottles a bit more, I'm not convinced by the theory that they let oxygen in. O2 molecules are nearly twice as big as H2O molecules. Surely a type of plastic that is permeable to O2 would be even more permeable to H2O and therefore completely inappropriate for making water bottles. I find it hard to believe that oxygen can enter the bottle any faster than it would pass through a cork.

That said, I will probably invest in some Better Bottles...

It looks like you have just volunteered yourself for an experiment: make 2 gals of wine no.1, age one in a BB, one on a plastic fermenter, compare after 6 months.

If only I had that kind of patience! I will certainly let you know if I get any spoilage in the mineral water bottles.

On another note, I'm currently experimenting with light apple wines like wine number 1 but given a bit more bite from very small muslin bags of fruit - a handful of grapes, a banana, a few elderflowers etc. Is there a part of the forum that already covers that kind of thing? I'm using cheap clear apple wine rather than the pulpy stuff that I reckons needs more time.

There are quite a few threads which deal with modifications to the Wine No.1 recipe, which should give you information and/or inspiration. Try these:

                          - feel free to update any/all of these with your findings, post recipes to the appropriate section and, just as important, tell us what didn't work

Add the fruit very late in the ferment....at around SG 1.010 or maybe 1.020, you will get fresher fruit flavours.

                              hope this helps
