    OK your Ideas for the Best Lalvin Yeast For:

    Blackberry - Elderberry steam juiced

    30 day juice concentrate apple/ red & white grape /cherry

    K1V-1116 for the elderberry/blackberry (and most other stuff)

    71B-1122 for anything with apples in

      RC-212 would also work for the Eldeberry/blackberry

        Having said that, you live where you can get the full range of Lalvin yeasts so I would likely go for Lalvin ICV-D254

        but the K1V-1116 is a cracking yeast

          I cant get them all but my local home brew place sells the D47, RC212,
          kiv1016 71B-1122, & the 1018 about $.59 to $.89 US I just picked a packet each as Im going to my cabin and make some wines this weekend.. the dry is a lot cheaper than liquid yeast and they sell the red star whatever series of yeast and some other stuff I dont have a clue... A lot of stuff for beer... a little for wine..

            Ron,

            I agree with the others that K1V or RC-212 are good choices for blackberry. For apple, you cant beat D47. Ferment apple cool - 60-65 F, if you can.

              ferment apple cool. is this something to do with the fining stage?
              i have a white grape and apple wine on the go at the minute.

                No, white wines often benefit from a slower cooler ferment, it helps retain delicate flavours and bouquet.
