  • Strawberry wine

    I have just racked my strawberry wine for the second time and it's looking nice & clear however there is quite a space at the top of the demi jonn. What should I top it up with? It tastes just the right sweetness so I dont want to use sugar syrup. Any suggestions ?

    if you only need to top up a little, then water will be ok, if you need to top up a lot, then a similar wine is best.

      If it were me, I would use an inexpensive dry commercial rosé. There are a lot of French rosés that would fill the bill.

      A dry white would also work in a pinch.

      Just try not to add anything that's sweet, as it could trigger renewed fermentation.

        I have an open bottle of white. Would there be any problem i.e introducing any bacteria or any thing nasty?

          That should be fine. Most white wines are heavily filtered to remove any bacteria or potential spoilage organisms.
