    Recently made a 4 litre batch of the following recipe using Orange, Peach & Passionfruit.

    3 Litres any juice cartons
    1 Litre of white or red grape juice
    1 lb Sugar
    1 tsp Pectolase
    1 tsp nutrient
    yeast

    After 8 weeks (approx) it had finished etc, and it tasted lovely.

    Decided to make a 8 litre batch of this on the 24/9, but unfortunately read the recipe wrong and put 4lb of sugar in (read it as 1 kilo not pounds so therefore put 2 kilos in). Didn't think this would be a problem, accept obviously take longer to ferment etc. On Tuesday (after 7 days) it has stopped "blooping", which in my mind is much too early.

    Has anyone got any ideas what to do, can I add more yeast to start it again?

    Any ideas would be welcome.

    What is the current SG?

    adding more yeast will not acomplish anything, you have likely reached the alcohol tolerance of the yeast, at around 14% and there is likely lots of sugar still left ....

      Possible options:

      Try to restart ferment (unlikely to suceed)

      Stabilise it and drink it sweet (might taste nice)

      Blend it with a very dry wine (might add a bit of complexity)


      Your Hydrometer is your friend fermenting without it is working blind

        The starting sg was 1090, I haven't taken a reading since it has stopped.

        I will do that later and let you know.

          Just done a SG reading and it's 990, will do one over the next couple of days and if no change will degass and add campden tablets etc.

              The SG sounds like it has fermented fully. You will have about 13.5% alcohol, so it might taste a bit 'hot'. If it does, hide it for a few months and it should settle down a bit.
