      I STILL haven't made this
I really do need to get it started though....
As I bought all the stuff, last time Aldi had the lychees on offer

It's probably the best white wine that I have made to date.

How long did you leave it to mature? I've made some but so far am not overly impressed with it...

Did you use grape juice or grape concentrate?

I feel its much improved with concentrate (1 litre to a gallon)

How much unconcentrated grape juice would you need to replace a litre of concentrate? Or, put another way, how concentrated is WGC?

Also, would using three litres of grape juice (say, or whatever the ratio is) be as good as WGC, or is there something special about WGC over and above the fact that it's concentrated?

Mine didn't turn out so great either, it is quite thin and watery. I used grape juice rather than concentrate so maybe that's why. A lot of my wines are thinner than I would like.

I broke down a pinot grigio kit (1 gal juice to 5 gal wine) ....

I "think" it was a magnum ultimate, but could be wrong........

I wouldn't say the wine is "thin" as such, but it's got more a bit of an odd tatse, but having sampled another bottle last night, I am hoping it's a maturing thing rather than just a dodgy wine, as last nights was far more drinkable than the one I had a while ago.

It's been in the bottle for 3 months, and I'd imagine it was stabilised etc back in March sometime, (I'm at work so I don't have my notes with me) so I'll try another in 3 months or so.

Another mystery fruit for me. I must admit that I've never seen, let alone tasted, a lychee. In fact, I'm not even certain how to pronounce it.

                          Is it LYE-chee or LEE-chee?

What would the taste be similar to?

It's LYE-CHEE. I can't exactly describe the taste, but it's almost floral. We used to have fresh ones at Christmas, but all the ones I've seen in recent years have been very small. In tins, I believe rambutans are related.
