I wouldn't use honey for sweetening, you will likely end up having trouble clearing. 1 tsp sugar per bottle should be fine (you can top the bottles with 29mm crown caps if you wish

Fantastic idea, never thought of sticking a crown cap on them. Will a standard lever capper work or is the diameter slightly different?

Standard capper is too small. the bench type have a different insert available which makes them 29mm

I think the standard ones are 22mm

Emily lever cappers have reversible jaws 22/29mm and are supplied with 2 cups (22 & 29mm) - I have 2, and Brupaks do the 29mm caps:
