  • Port

I saw a post from Bob a week or so in which I think he said the Port he was currently enjoying was "divine". I've spent a couple of hours looking around for the thread but for the life of me I can't find it.
Can anyone point me to any mention of the recipe for that Port? I'd like to give it a try.

Now I come to mention it...where is the recipe section? I can't find it anywhere.

Click on 'Winemaking Area' and scroll down to the end of the list. Recipe section is there.

And here's the link to Bob's recipe

A good few months back he was finishing off some port I'd left with him I think, whether or not that's the one that was divine I don't know. Maybe have a look through the what's in your glass tonight thread in 'general chit chat'

If it was, it was a Kenridge port kit.

      Nope, wasn't mine..

I made 5 gallon of this recipe 2 years ago.
One gallon was fortified with a cheapo brand.
One gallon was fortified with Courvoisier.
I just wanted to see what the differences where
Its still bulk aging.. so I haven't drank any yet...
The remaining 3 gallon of wine was not fortified, and after a year aging, was so lovely, I make 5 gallons last year, again, I didn't fortify.
I hope to do this again this year, if I can get enough fruit

Is that recipe ready to drink then after just two months or is there a certain amount of time it should be matured for?

                2 months ??
I know when I made it, I was advised (by Bob, if I remember correctly) to leave it for a minimum of 2 years... which I have done now...
I may bottle it soon... or I might leave it another few months

I was going off what he said about oaking it, thought it sounded far too soon!

Ahh.... I did oak mine... but tasted it to see if it was enough at the time.
I think I left it for about 3 months.

Mental note for a trip to Spritz' on the scrounge for port.

                        No need to scrounge Rich....
Payback for the chilli wine... which was a fab marinade/sauce for some salmon, by the way
I will make sure a small bottle is put aside with your name on it, when I do get round to bottling
