hi, i'm trying a recipe out of cjj berry's book and i'm just wondering has anyone else tried it and if so did you add any acid ,the recipe does'nt call for any,i'm just not sure if i should or not

4gal elderberry maturing,2gal sugarbeet wine maturing
1 gal hedgrow wine maturing,
drinking cyser drinking elderflower -
Once you have the must put together, test it using a ritchies acid test kit (£5-6) or i you dont have one por cant access one then taste it and see how it sits
