  • Wine calculator...?

    Hi all,

Anyone use this wine calculator, or anything like it? Is it accurate?

I have put some of my fruit cocktail and ribena wine recipes into it and it's already telling me they are too low on acid and too high on tannin! Doh!

Thank goodness for wine number one.

    And...

I have been messing about with the wine calc. 1.5 and come up with this for a 4.5l dry red [style] table wine... According to the calculator, these ingredients are all you need...

    1000ml Red Grape Juice
    666ml Ribena Cordial
    500g Sugar

There doesn't seem to be a need for any further acid/ tannin additions for the ingredients to make a Dry Red Table wine slap bang in the middle of the Dry Red Table Wine parameters...

    Anyone any comments?!?!?!?

Well, yes, basically it says that's it (though probably nutrient and pectic enzyme too)! I was a bit confused because I have seen Ribena recipes asking for up to 2tsp of citric acid in a gallon, so none seemed a tad optimistic. I suppose some of it is personal taste but I personally like the idea of have a range to aim for...

When Ribena comes down to a £1 in Asda then I'll get this one on.

Good to know. I wonder why more don't seem to use it. I'm sure it's not gospel, but a useful addition to the tools of the winery!

Are any from your list juice and/ or tins only? I've already got my eye on some tins of peaches!

That looks light on acid to me....but not sure of acidity of ribena...I would never follow a recipe blindly as the acid and sugar content of fruits (and indeed fruit juices) vary considerably from season to season

a hydrometer and a £6 Ritchies acid test kit will get you to the right place....acidity is the first thing to quality control in the quest for good wines, and your hydrometer is your friend.

              regards

The software does look neat, and will give a good starting point, but i would check numbers and/or taste.

Great news... One problem, for those of us without scales to measure 1 gram, what are the equivalent in teaspoon measures.

Just bought a set of teaspoon measures from Morrisons!

Have a word with your local drug dealer - he can measure powder down to 1 gram

                        1/4 tsp = 1.2294g

Keep in mind not everything weighs the same. Here is a chart from Jack Keller's site that shows the teaspoon equivalents for various adjuncts.

A good gram scale is an indispensable tool for winemaking. Might be worth a small investment. I've seen them on places like eBay for as little as $15... which is around 10 quid I think.

I use a Sunartis digital measuring spoon that has a 0.1 g resolution bought when Lakeland were selling them off cheap, now £46 on amazon.co.uk, but the ones for £12.95/£14.96 + postage from Conrad Electronics look very similar.

There are 5 grams in a teaspoon.

But...a teaspoon is a unit of volume, where as a gram is a unit of weight.

There are less grams of sugar in a teaspoon because of it's texture/shape than something in a powdered form.

Unless you have a digital scale, 1 gram is going to equal "A wee bit"
