  • When to degass?

    Given a process flow of roughly - Primary/Secondary ferment - 1st rack - campden - wait 1/2 mths - 2nd rack - wait 1/2 mths - 3rd rack - campden - age - campden/sorbate if necessary - bottle - drink.

Where in this path does one degass, assuming you are not going to let it do so naturally?

I made the mistake of doing so just before the '1st rack' - but this stirred up some of the sediment, that I then transferred into the next stage. I was thinking it was daft to 'rack - campden - degass' as surely I would be pulling off the SO2 gas I have just put in via the Campden.

So should it be '1st rack - degass - campden'?

      Same here.

      1st Rack >> Degass >> 2nd Rack >> Degass.

Racking will also degass a little anyway (depending on method of course)
