  • How long?

    How long can a wine that has cleared but has dropped a good 1/2" thick deposit be left on the deposit?

    The wine in question is a fruit juice wine No.1 and had fermented to dry, racked, campden tablet and sorbate added, degassed, bentonite added and left to clear which took about a week and has been left for another week as I couldn't find the time. Can it be tainted?

    get it off that amount of sediment ASAP

      you should be ok at a couple of weeks though, but always best to act early

          The yeast cells in the lees will start to die (autolysis) and this can produce off smells and flavours, but a couple of weeks should be alright.
