    When is the best time to add this, at the start or after fermentation is complete?

    Right at the start. Kit manufacturers differ slightly with their instructions at this stage. WinExpert say dissolve the bentonite using boiling water and then this is the very first thing that goes in the primary. Kenridge instructions say sprinkle the bentonite onto your must before the yeast goes in.

      Quick warning. The Vineco (KenRidge) bentonite is different from the Winexpert stuff, and dissolves easier. A few years ago, Vineco switched bentonites and changed the instructions.

      You should follow the instructions in the kit or on your bentonite package(if not a kit. Hopefully it actually has instructions).
