  • How do you syphon from a must full of bits

    I'm making the Dry White (Scarborough 1989 winner) recipe. 1lb 2oz of sultanas 'blitzed' in 6 pints makes a thick sultana stew. When it comes to racking to a DJ I'm thinking of pouring the must into a new sterilised bucket through a rice strainer because I've found similar jobs soon clog the syphon tube. I assume this problem has been solved and there's an accepted 'right way' of dealing with it. Can you please advise?
    Now bottling 20DJs of 2013 red and making room to rack 5 carboys of 2014 red to the DJs where they can wait for another winter.

    I have used a sieve to push down the thick soup to create a well of relatively clear liquid that you can then siphon.

      As opposed to racking into a DJ, I pour it in through a straining bag and funnel combo.
