How long to mature

I have 1 gallon Fruit Cocktail and 1 gallon Strawberry wine both from canned fruit now clearing. How long do I wait before drinking? This is my first attempt at making wine from canned fruit and I am looking forward to sampling it.

They should both be drinkable straight away, but will develop as they age. Try them at intervals and make notes, you will find the optimum drinking point
