If its your first time with the kit then go with the instructions, this will give you a reference point to work from when tweaking it later.
Next to try would be putting in a good quality yeast which is relavent to the wine style.
If its a white wine kit personally I would only play with the yeast and fermenting temperature ie lower at 15 - 18c to retain more of a pineapple aroma.
For a red kit there is another thread somewhere about tweaking a beaverdale kit.
