    hi every one
    not very often i post ,but enjoy reading them.
    but i now have a query
    i started a morello cherry (2 jars) i used the syrup of the jars along with 1.5 ltr of apple juice and 1ltr of white grape juice and sugar to 1080 sg and water to 1 gallon ,i am going to use the cherrys at later stage of ferment (3 to 4 days) they will be crushed , at what stage should i use the pectolase , and how much ,

    Not sure if cherries are high, med or low in pectin but I'd put half a teaspoon in the cherries a day before you add them and a half in the other juices with the yeast and other ingredients...

      And don't crush the fruit. Racking away from fine fruit pulp/puree/debris can be a complete f****r and cause lots of racking loses........

      And as Daniel says, pectolase best before fermentation. It can be used afterward as well but you double the dosage once there's alcohol present.
