  • Beaverdale Cabernet Sauvignon

    Just having a look through the instructions for my Beaverdale kit and I notice they don't mention racking of the lees. should I just not rack or should I rack when I add the stabiliser? Any advice would be greatly appreciated.

    As I have been told before, the Beaverdale kit instructions are spot on, and when first trying them follow them to the letter. If it doesn't say rack, don't rack

      Im not sure but on some of the kits they say not to rack and to stir the lees back into the wine to aid in clearing i have just stabalized a beaverdale chablis blush and it did state to rack of the lees. like Ukric says if it dosen't say rack then i wouldn't do it.

        Follow the kit instructions, omitting no detail no matter how slight. the only thing I would say is don't go by number of days, but by hydrometer readings.

              And just to add, you have a fantastic kit in the making, I compared a commercial Cab Sauv with the Beaverdale last Christmas, Richard S will verify, the Beaverdale at a mere few weeks old blew the pants off the commercial which I believe was a Hardy's 2008 vintage, no comparison.

                    Well, thats DAMN good to know...
                    I have a Beaverdale Cab Sauv on its way to me know, but have never tried it

                      If that is the Cab Sauv that Mark made, yes it was awesome (he added some extra oak, hint )

                          Nae extra oak for me Haven't got any more. Depending on how this kit goes I might get the 5 gallon kit and do a wee experiment. Different loadings of oak, etc. to see how the flavour is affected.

                            First time making a kit - always make it per the instructions and make any adjustments in subsequent batches.
