I went with the instructions. I was tempted to adjust, but decided to let it be. It's rolling along nicely. The white oak it came with is like sawdust.Originally posted by HippieComment

a few months only and it is drinkable. just a slight bit sharp. the color is darker than normal i think for a chardonnay but the taste is spot on. it's a keeper! will let it age and round out a bit.
