One of my kits has instructed me to remove bung and airlock and cover the demijohn with tissue held on with an elastic band (finings have just been added). This is to assist carbon dioxide release. I've done as instructed but I'm a bit sceptical about leaving my wine this open. I'm going on holiday for two weeks at the weekend and was planning on leaving it to clear while I'm away. However, I really don't want to leave it without the protection of the bung and airlock for all this time. Should I:
a) toss away the tissue and just use bung and airlock
b) keep the tissue covering it and swap back to bung/airlock at the weekend
or
c) leave it as it is until I get back?
The other kit I'm doing hasn't said anything like this so that is doing all its clearing with the bung/airlock in place.
