I used the following recipe (C.J. Berry)
5lb peapods
3lb sugar
1tbs citric acid
1/2tsp grape tannin
1 gal water
yeast and nutrients.
I left it to age in the DJ for a year(ish) and bottled it yesterday. Cook's perks tell me that it is surprisingly good stuff, especially when you think that the main ingredient would normally find it's way onto the compost heap! As I'm about to harvest this year's peas I'm certainly going to make another batch of this.
PS forgot to mention pectolase - it's not in the original recipe but I always add it just in case.
