      • Stir it before doing anything else........

see what happens within 24 hours, if it doesnt correct itself then additions/interventions are required

        hope this helps
        regards

          • I've fermented it, that is if it is Rubicon juice and not Lidl's own brand, no mould or other off things with it.

            • Yes, it's Rubicon. The green bits, very small, look like crocodile eyes breaking the surface of the water.

I've given the must a good stir [5 gallons of the darned stuff ] and will check again in the morning and keep a close eye.

                • I'm sure I read somewhere on this Forum that the Rubicon juice does tend to generate a lot of foam. Not sure about the green bits though.

                  • Mine had no green bits in it, but it did have more of a 'solid' foam on top that I stirred back in a few times.

                      • I've scooped the green bits out. They don't appeared to have multiplied yet - fingers crossed - but I will be keeping a close eye.

You're right about the foam Pete. The yeast is tearing into the wine and the cap of the foam was pretty solid - almost like a skin on a rice pudding.

I've given it a darn good stir and will see if any more nasties appear later.

If I do end up using 2 campden tablets per gallon, will that affect the yeast? If so, will it require another starter?

Thanks for all of the help guys.
