  • Freezing fresh fruit

    I purchased a massive amount of peaches over the weekend. If I freeze them to soften them up a bit should I remove the stones first? Can the stones just be thrown into the mix when I start a batch?

    Also the same question applies to plums for the pits. Would the pits affect the taste or fermentation?

    The pits will indeed affect the taste.

    Just pull the peaches in half, pull out the stone, chunk in the freezer bag. Plums are harder. Don't cut yourself.

        Peaches are quite easy to de-stone. Use a sharpe knife and cut right around the 'equator' and then twist the two halves. One half will come away to expose the stone. Then just pluck it out.

          that works fine for the larger plums, but if you are using greengages or damsons, then it becomes really hard to destone.

              freezing plums

              Yes, the ones I have are not much larger than cherries, but to large for a cherry pitter hand tool. I was simply smashing them in my fingers. I think I might be better off just cleaning them out once I put them in the fermenter.
