    I had read somewhere that the fruit can be removed after a few days, but also once the SG is under 1.040 . What is the general thought on this? The volume in my primary is to the top with my plums, while my peaches are just pulp.

    I would remove the fruit after about 3-4 days with both wines. Stone fruit wines are notoriously hard to clear, the longer you leave the fruit in, the more starch leaches out.

      so there is no magic number on time or SG ? My wife is complaining about the smell in the kitchen, very sensitive nose.

        Nope, no magic time or SG. Experimentation is key.

        Tell her to get used to it, you are a winemaker, then drink yourself to sleep each night.
