  • Racking a finished wine onto fruit?

    My blackberry wine has been finished for a while now, it went to 992 fg. I sweetened it slightly to 1000 with red grape juice but am now thinking of racking onto some blackberries i picked last night to get some more blackberry flavour into it and a touch more sweetness. Is this a good/bad idea?

    Stabilized with sulphite and sorbate it is ?

    Juice from the pressed berries I would add.

      Yes fully stablilised. I was thinking of pressing the berries, my only worry was adding particles to the wine but i guess they would drop out given time, or a dose of finings?

        Ensure you sulphite the berries whichever way you decide, they are full of wild yeasts and bacteria, you don't want to be introducing these to a finished wine.
