  • Question on sediment and fining

    We are just preparing to bottle our strawberry but have a wee problem with the sediment.

    We got things in a bit of a duff order, in that we fermented to dry but didn't stabilise until recently, c3 months after fermentation stopped.

    We fined before we stabilised doh! So we stabilised (campden plus potassium sorbate both Youngs products) last week and it caused a haze/cloudiness. So we have fined a 2nd time but the sediment seems to be settling on the sides of the dj? This hasn't happened before.

    So my questions...
    Do we just try to siphon very carefully?
    Do we stir it to try and knock the sediment down to the bottom?
    Will it fall with time - though we need to clear the decks?
    What caused this?

    I've attached a photo to show what it looks like (if they work). We used Kwik Clear finings about 12 hours ago.

    Give it a few days and it should all settle, rack carefully to a new container, and then bottle if the wine is clear, if not, give it more time.

          If you have sediment setting on the sides of your DJ, give it a couple of sharp twists. Usually releases the sediment from the sides and allows it to settle to the bottom. I believe that some folks always do this to their wines even if they can't see anything clinging to the sides.

            As all above it will drop with time, but like Steve, I tend to just give it a sharp twist to aid it on it's way.
