  • Freezing muscadines

I've been making muscadine wine for years but have never been able to capture the fruit smell or taste in my product until now. Thanks for the tip Hippie...you da man!!!

I kept the fruit frozen for 2 mo. then partially thawed it and pressed it (actually more like a food strainer). The aroma and taste of the wine has more of a fruit taste than any other I've made thus far. The hulls or skins of the muscadines is where the flavor lies and freezing them seems to have caused them to release this wonderful flavor.
