  • Strawberry very very late addition?

    I have a gallon of strawberry wine which is done, ferment over. Problem being while it smells fantastic the taste isn't there

    I have some alpine strawberries that were washed and frozen last year, not many, a handful maybe. Does anyone forsee any problems if I add the strawberries to it now and let it sit a few weeks?

    No harm that I can see Ric, though I don't know that a handful of berries will get you much.

    What I've sometimes done to boost the flavor of berry wines is to make a simple syrup that incorporates the berry itself. For example, with strawberry wine, you can macerate a bowl of chopped clean fresh/frozen berries with sugar (and a tiny amount of sulphite solution to keep out moulds, etc.). The sugar helps draw the juice out of the berries. Just let it sit in the fridge for a couple of days and then strain it. You will be left with a strawberry flavored syrup that can be used for sweetening your wine.

      I agree. I regularly add fruit after fermentation.
