  • earthy aftertaste

My blueberry wine is 11 months in bulk aging. We tried it yesterday for the first time in a long while and it has a subtle earthy aftertaste. I can't place it. It's dark and smooth right underneath the berry and wasn't there a few months ago. Very strange.

Perplexing indeed. Bentonite reportedly can cause an earthy aftertaste.

Had to check the recipe - no bentonite.

      Hmmm. Would elderberries do it?
