I'm just going to start this from my steamed juice. But I can't find any recipe. I've got juice from 2 3/4 lb blackberries and 2 lb elders. Should I add anything else, acid etc?
My thoughts are -- use the same recipes as for whole fruit surely - this is the 'JUICE' from a given weight of fruit.
Steaming is just a process. So if a recipe calls for 4lb of fruit you want .. the steamed juice from 4lb of fruit.
Next time you do some juicing weigh the whole [before] and the remains [after]. This should give you figures for loss which will help calculate for recipes.
WARNING. This would be my approach BUT I have never done it. Experience may dictate otherwise.
