Rowan (Mountain Ash) berries can be made into wine but my information indicates that they are extremely bland by themselves. They are considered a malic fruit and if going to make wine out of them it is suggested to blend with oranges or pineapples. I am sure there are some recipes - I can search in my books but you could do some searching on the net and your would find some there. If I find a recipe I will post. Cheers DAW

Here is a quick recipie from some old information that I have:

      2 pounds of berries
      7 pts of water
      2 pounds of sugar
      1 tsp of acid blend
      1/2 tsp pectic enzyme
      1 tsp nutrient
      1 campden (crushed)
      1 pkg of wine yeast.
      For 1 gallon

Just a basic recipie - add 10-20% of the 2 pounds of the mountain ash fruit with either the oranges or fruit. Cheers DAW -- hope this helps... Harvest them and put them in the freezer until you are ready to start the process.

Just a little more information after reading the method: the berries if possible should be picked after the first frost; if the berries are good and ripe and you freeze them you should be OK. Put the berries into a nylon straining bag and into the primary fermenter after removing from the freezer. Stir in all other ingredients except the yeast and let rest for 24 hours. When the temperature reaches 70 degrees F you can they pitch the yeast. Cheers DAW
