Are the kits adding to much, or are we not adding enough? should I just drink my coffee this morning and not worry about it?
we are adding 50ppm which is around the right amount

dont the mist kits come as stabiliser and sulphite in one dose?
          (I think they do)

Well adding 1/4 tsp didnt seem to do any damage. Dropped to 1.060 in three days.

            Transfered off berries.

            Nice colour too.

              looking good...

for the record 1/4 tsp is enough for a 5 gallon batch, the ferment will have gotten rid of some of it for you, but dont add any more at racking

              regards

I already had some Sodium Metabisulphate from sausage making, so I got some very accurate (to 0.01g) digital scales and add 0.44g / gallon. Is that the same as a campden tablet?

My mental arithmetic says 'yes', but I'm sure someone will come along and scream 'NOOOOOOOOOOOOO!!!!!' if I'm wrong

                    I add 5ml of 10% meta solution (e.g. 10g in 100ml), so that is 0.5g.

Yes, that's close enough. For red wines, 0.25g is probably sufficent, and 0.5g for whites. 0.44 seems like kind of a happy medium.

I'm really happy I switched from crushing campden tablets (pain) to using 5ml of 10% solution, I bought a medicine syringe/plunger from the chemist and it works great.

I don't think I've quite woken up yet. I read that and thought why was a plumber selling syringes?

How long will it keep for if a batch is made up and kept in an airtight container? Obviously not gonna use it all at once, but if it loses it's potency I might stick to Campden tabs.
