tannin confusion

    I have read in some recipes that Oak Chips are used.
    Can anyone tell me why?
    When are they used?
    What do they do?
    And lastly do they affect the acidity?

      Oak chips are sometimes added to simulate the flavor you would get if you were to age your wine in a barrel. To some extent it will also contribute tannin - since oak is also a source of tannins.

      Oak chips won't affect the acidity.

          Nicely put Steve.

          I could only come up with "you are thinking too hard, too soon" but I thought better of putting that, as it might seem offensive (which was not the idea).

          Do some, taste some - it will make sense as you go along.... and as your experiences grows there will be all sorts of things to read, worry about, fettle and fudge up. That is the joy of this hobby - you can just keep going.

            I understand that this book was way before its time and I may have the opportunity to get hold of a copy. It is an old copy though, so my question is does it matter if the issue date was in the late 60s with this book?

              From memory this was reprinted several times 60 & 70's hard and paperback. I don't think it changed much.

              I collect old wine making books (by accident) and this must be one of the most popular - hence the reprints. No forgetting C J J Berry of course.

                Any edition of the book will serve you well.....

                I have a first edition dated 1967

                the last edition was printed (I think) in 1991
