Having decided to ditch the Ritches Sulphuric test kit and buy a Tartaric kit from Brouwland, I thought I would have a practice with it.
I started a Californian Fume Blanc kit at the weekend and made it up as per instructions to 23 litres. I took a sample of must from the bucket and tested it and got a result of 0.4%. I was expecting at least 0.7% so thought I must have done something wrong and took a second sample, reread the instructions and retested and got the same result.
The concentrate had been well mixed as I always use a paint stirrer in an electric drill to make sure it is thoroughly mixed and to introduce oxygen. At the point of testing the yeast hadn't been introduced.
To make sure my method of testing was correct and to check that the test kit itself was ok I tested a sample of the Chapel Down Baccus I had opened at the weekend and that was 0.7%.
Is there something different about the concentrate in a kit that doesn't conform to normal testing?
