Lychee Wine

  • I buckled and drove to the brewshop and tescos for ingredients.

    On Saturday I'm going to do three batches.

    Batch 1 - Beaverdale Gerwurztraminer (4.5 litre kit)
    Batch 2 - Rich's original recipe
    Batch 3 - Rich's recipe with 2 litres WGJ instead of concentrate

    I'll be using a Gervin D yeast or Lalvin EC118 (Champagne) - haven't decided yet but will take guidance.

    Look forward to being able to try them side by side in a three months.

      2 grape juice, and 1 apple...

      I've a 5 gallon batch on the go, with white grape juice, apple. with 1 litre of orange in the 5 gallon mix too to see what happens :O

        Would be better with 1 grape juice and 1 apple juice, apple juice seems to complement the supermarket grape juice.

        • Approved ammendment to the experiment.

          Batch 3 - Rich's recipe with 1 litre WGJ, 1 litre Apple juice, instead of concentrate.

          • I pressed my lychees with the last batch too. It's given it a bit more flavour. Another bottle gone tonight already..

                    • I'm very happy with my efforts on this one, thanks for a great recipe. now I'd like to do a dessrt variety, without back sweetening. I'm thinking of reducing the water content and doubling the lychee and syrup as a starting point.

                      Aiming for 14%. Can anybody suggest a finishing SG to give a sauternes type residual sugar?

                      Then would I used a specific yeast or force the stop.

                      • Just to say not usually caring for white wines and having just bottled this it is quite stunning!

                        I hade no WGC so used around 8oz sultanas and 1 1/2 tsp citric acid having no tartaric.

                        • Has anybody elses local tesco stopped selling tinned lychess? Mine has along with tinned strawberries as well!

                            Yep Morrisons not got any either however I was going to mention this anyway I noticed sainsbury's and i think Tesco selling 1 litre cartons of lychee juice.
                            When time permits was going to try a wine No1 with the lychee juice would save all the messing around with fruit if results were comparable to the original recipie ?.Any thoughts?

                            Here is the juice they are selling made by Rubicon around £1 litre

                              Tinned fruit sales seem to be seasonal, and in Feb for the Chinese New Year appears to be the time to stock up on cheap tinned Lychees. Having said that, I'm fairly sure that Aldi are still selling them, or maybe I imagined it.

                              Either way I bet the price has gone up by now.
