I come seeking advice and guidance - I have 10lbs assorted apples, 4.5lbs of damsons, and 4lbs + of Elderberries - each enough in its own right to create a gallon of Apple, Damson, and Elderberry wine - however, is there some combination of these fruits that would produce a more interesting / better wine, and if so could you give me a clue as to quantities?
(I do also have a load of tinned peaches and pineapple which I was going to experiment with when fresh produce all harvested and bubbling away - are these best left to their own concuctions?)
